1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

2 tablespoons hoisin sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

2 green onions, chopped (for garnish)

1 teaspoon sesame seeds (for garnish)

Cooked jasmine or basmati rice, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken pieces with soy sauce, hoisin sauce, honey, rice vinegar, and cornstarch. Mix well and let it marinate for about 5 minutes.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

      Cook the Chicken: Add the marinated chicken to the skillet, spreading it out in a single layer. Sear the chicken for about 3-4 minutes without stirring, until browned. Flip the pieces and cook for an additional 2-3 minutes until cooked through.

        Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

          Glaze the Chicken: Pour in the remaining marinade from the bowl. Stir well and cook for 2-3 minutes until the sauce thickens and coats the chicken nicely.

            Serve: Remove from heat and transfer the Mongolian chicken to a serving dish. Garnish with chopped green onions and sesame seeds. Serve hot over cooked jasmine or basmati rice.
