Ingredients
  

1 lb chicken thighs, boneless and skinless, cut into chunks

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

1 large sweet potato, diced

1 can (14 oz) diced tomatoes

1 cup natural peanut butter

4 cups chicken broth

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach

2 tbsp vegetable oil

2 tbsp soy sauce

1 tsp ground cumin

1 tsp ground coriander

1 tsp paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Sauté the Aromatics: Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes. Stir in the garlic and ginger and cook for an additional 2 minutes until fragrant.

    Brown the Chicken: Add the chicken chunks to the pot and season with salt, pepper, ground cumin, ground coriander, paprika, and cayenne pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.

      Incorporate Sweet Potato: Add the diced sweet potato and stir all ingredients together for a couple of minutes.

        Add Tomatoes & Broth: Pour in the canned tomatoes and chicken broth, mixing everything well. Bring the mixture to a simmer.

          Integrate Peanut Butter: Once simmering, add the natural peanut butter and soy sauce, stirring until fully incorporated. Simmer for about 15 minutes, allowing the sweet potato to soften and flavors to meld.

            Stir in Chickpeas & Spinach: Add the chickpeas and fresh spinach to the stew, cooking for another 5 minutes until the spinach wilts and the chickpeas are heated through.

              Taste & Adjust: Taste the stew and adjust seasoning with more salt, pepper, or cayenne as desired.
