Ingredients

2 ripe peaches, peeled, pitted, and sliced

1 cup brown sugar, packed

1/2 cup unsalted butter, softened

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup plain Greek yogurt

1/4 cup chopped pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Prepare Peaches: In a bowl, toss the sliced peaches with 2 tablespoons of brown sugar and set aside to allow them to release some juices.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and the remaining brown sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract until combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt. Start and end with the flour mixture; mix until just combined.

Fold in Peaches: Gently fold in the sliced peaches and chopped pecans if using, being careful not to overmix.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Serve it warm or at room temperature, optionally topped with whipped cream or a scoop of vanilla ice cream.
