6 medium-sized russet potatoes, peeled and diced

8 slices of thick-cut bacon, cooked and crumbled

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup chopped green onions

1/2 cup sour cream

4 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1/2 teaspoon smoked paprika (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until just fork-tender, about 10-12 minutes. Drain and set aside.

      Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from heat, crumble, and set aside.

        Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, sour cream, garlic powder, onion powder, and smoked paprika. Season with salt and pepper to taste.

          Combine Ingredients: In the prepared baking dish, layer the cooked potatoes evenly. Sprinkle half of the crumbled bacon, followed by half of the cheddar and mozzarella cheese. Pour half of the egg mixture over this layer. Repeat the layers with the remaining ingredients: potatoes, bacon, cheeses, and finish with the remaining egg mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the top is bubbly and golden brown.

              Garnish and Serve: Allow the casserole to cool for about 10 minutes before slicing. Garnish with chopped green onions and additional cheese, if desired. Serve warm.
