Cheesy Masala Beans on Toast

1 can (15 oz) mixed beans (kidney, black beans, pinto)

1 cup cherry tomatoes, halved

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 tsp garam masala

1 tsp cumin powder

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or a blend)

4 slices of crusty bread (your choice)

Fresh cilantro, chopped (for garnish)

2 tbsp olive oil

Optional: A squeeze of lime juice for brightness

Instructions
 

Prepare the Beans: Drain and rinse the mixed beans in a colander under cold water to remove excess sodium. Set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and green chili, cooking for another 1-2 minutes until fragrant.

      Add the Tomatoes: Incorporate the halved cherry tomatoes into the skillet and cook until they start to soften, about 3-4 minutes.

        Spice it Up: Sprinkle in the garam masala, cumin powder, smoked paprika, salt, and pepper. Stir well to combine and cook for another minute to let the spices bloom.

          Mix in the Beans: Gently fold the rinsed beans into the tomato-spice mixture. Cook for about 5-7 minutes, allowing the beans to absorb the flavors and heat through.
