Dump-and-Bake Chicken Tzatziki Casserole

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups cooked rice (white or brown)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup plain Greek yogurt

1/2 cup mayonnaise

2 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese

1/4 cup feta cheese, crumbled (optional)

Fresh dill and lemon slices for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Casserole Base: In a large mixing bowl, combine the cut chicken pieces, cooked rice, cherry tomatoes, and diced cucumber. Stir gently to mix.

      Make the Tzatziki Sauce: In another bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, fresh dill, lemon juice, salt, and black pepper until well combined.

        Combine Everything: Pour the tzatziki sauce over the chicken and rice mixture. Stir well until everything is evenly coated.

          Assemble in a Baking Dish: Transfer the mixture into a greased 9x13-inch (or equivalent size) casserole dish, spreading it out evenly.

            Top with Cheese: Sprinkle the shredded mozzarella cheese evenly over the top of the casserole. If using, crumble feta cheese over the mozzarella.

              Bake the Casserole: Cover the casserole loosely with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let the casserole rest for about 5 minutes. Garnish with additional fresh dill and lemon slices if desired. Serve warm and enjoy!
