Dump-and-Bake Chicken Tzatziki with Rice Recipe

Ingredients
  

1 ½ cups uncooked long-grain rice

4 boneless, skinless chicken breasts

1 cup chicken broth

1 cup plain Greek yogurt

1 medium cucumber, grated and excess liquid squeezed out

2 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

Salt and pepper, to taste

1 teaspoon paprika

1 tablespoon olive oil

½ teaspoon dried oregano

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a 9x13 inch baking dish, spread the uncooked long-grain rice evenly across the bottom.

      Place the chicken breasts on top of the rice, seasoning them with salt, pepper, paprika, and oregano for flavor.

        In a mixing bowl, combine the chicken broth with 1 tablespoon of olive oil and drizzle this mixture over the chicken and rice.

          In another bowl, prepare the tzatziki sauce by mixing together the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Adjust seasoning to taste, then set aside.

            Cover the baking dish tightly with aluminum foil to trap the steam and promote even cooking. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the rice is tender.

              Once finished, remove the foil and let it sit for about 5 minutes. Fluff the rice with a fork.

                Serve the chicken over a bed of rice, drizzling the tzatziki sauce generously over the top.

                  Garnish with fresh parsley if desired and enjoy!
