Ingredients

2 large cucumbers, sliced into rounds

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, torn

3 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Instructions

Begin by washing the cucumbers and cherry tomatoes thoroughly. Slice the cucumbers into thin rounds and halve the cherry tomatoes.

In a large mixing bowl, combine the cucumber slices, halved cherry tomatoes, and mozzarella balls.

Gently fold in the torn basil leaves to the mixture, taking care not to bruise the leaves.

Drizzle the extra-virgin olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.

Toss the salad lightly to coat all the ingredients evenly with the dressing.

Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld together before serving.
