4 medium-sized potatoes, diced

1 medium onion, chopped

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 cup cooked sausage or bacon, chopped

4 large eggs

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or green onions, for garnish

Optional: shredded cheese, avocado slices, hot sauce

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 5-7 minutes, until slightly tender but not fully cooked. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they start to soften.

      Add the Potatoes: Add the par-cooked potatoes to the skillet, and season with paprika, garlic powder, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the potatoes are golden and crispy.
