Ingredients

1 pound of chicken breast, diced

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 pound potato gnocchi

1/2 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnishing

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 6-7 minutes until the chicken is browned and cooked through. Remove from the skillet and set aside.

Prepare the Garlic Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Add Vegetables: Add the cherry tomatoes and cook for another 2-3 minutes until they begin to soften. Then, stir in the spinach leaves until wilted.

Combine Ingredients: Return the chicken to the skillet. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer for about 2-3 minutes.

Incorporate Gnocchi and Cheese: Add the cooked gnocchi to the skillet and sprinkle in the grated Parmesan cheese. Gently toss everything together until the gnocchi are coated in the creamy sauce and heated through.

Finalize: Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh basil leaves.

Serve Warm: Enjoy your Garlic Chicken Gnocchi Skillet hot, drizzled with a bit more olive oil if desired.
