Ingredients
  

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup black beans (canned, rinsed and drained)

1 cup low-fat cottage cheese

1 cup enchilada sauce (store-bought or homemade)

8 small corn tortillas

1 cup shredded reduced-fat cheese (cheddar or Mexican blend)

1 tsp cumin

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, combine the shredded chicken, black beans, cottage cheese, and cumin. Mix until well combined.

      Spray a 9x13 inch baking dish with cooking spray and spread a thin layer (about 1/4 cup) of enchilada sauce on the bottom.

        Take one tortilla, place about 1/4 cup of the chicken mixture in the center, roll it up tightly, and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.

          Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top, making sure to cover them evenly.

            Sprinkle the shredded cheese over the top of the enchiladas.

              Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and slightly golden.

                Remove from the oven, let cool for a few minutes, and serve warm with your favorite toppings (like avocado, cilantro, or Greek yogurt).
