Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

Ingredients
  

1 lb ground beef

4 medium-sized potatoes, peeled and diced

1 large onion, chopped

1 can (15 oz) diced tomatoes, undrained

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.

        Stir in the garlic powder, onion powder, paprika, salt, and pepper. Mix well to incorporate the spices evenly.

          In a large mixing bowl, combine the diced potatoes, can of diced tomatoes (with juice), and frozen mixed vegetables. Add the cooked ground beef and onion mixture, stirring until everything is evenly mixed.

            Transfer the mixture to a greased 9x13 inch casserole dish, spreading it evenly.

              Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Bake uncovered for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly.

                  Once baked, let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
