Ingredients

1.5 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar or apple cider vinegar

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, whisk together honey, soy sauce, minced garlic, ginger, vinegar, sesame oil, and a touch of salt and pepper. Add the chicken thighs and ensure they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs (reserve the marinade). Cook the chicken for about 5-7 minutes on each side until golden brown and fully cooked through (internal temperature should reach 165°F/74°C).

Make the Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring to a gentle simmer over medium heat. Mix cornstarch and water in a small bowl to create a slurry, then slowly whisk it into the simmering marinade. Allow it to simmer for another 2-3 minutes until the sauce thickens.

Combine: Once the chicken is cooked, pour the thickened sauce over the chicken in the skillet, coating it evenly. Let it simmer for an additional minute to soak in those flavors.

Serve: Transfer the chicken to a serving platter. Garnish with chopped green onions and sprinkle with sesame seeds for an extra crunch. Serve it warm over steamed rice or with your choice of side!
