Ingredients

2 cups elbow macaroni

1 lb boneless, skinless chicken thighs, diced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 tablespoon honey

1/2 teaspoon crushed red pepper flakes

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Boil a large pot of salted water. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Season the Chicken: In a medium bowl, toss the diced chicken with salt, black pepper, smoked paprika, honey, and crushed red pepper flakes until well coated.

Cook the Chicken: In a large skillet over medium heat, heat olive oil. Add the seasoned chicken and cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

Make the Cheese Sauce: In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 2 minutes to form a roux. Slowly whisk in the milk, ensuring there are no lumps. Continue whisking until the mixture thickens, about 5-7 minutes. Stir in garlic powder and Dijon mustard.

Add Cheeses: Once the sauce has thickened, reduce heat to low and gradually add the cheddar, mozzarella, and Parmesan cheeses. Stir until the cheeses are melted and the sauce is creamy.

Combine: Add the cooked pasta to the cheese sauce, followed by the cooked chicken. Stir well to combine and heat through.

Serve: Spoon the Honey Pepper Chicken Mac and Cheese into bowls, garnish with fresh parsley, and enjoy!
