Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 cup orzo pasta

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

Sear the Chicken: In a large skillet or saucepan over medium-high heat, add olive oil. Once hot, add the chicken and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the pan and set aside.

Sauté Aromatics: In the same pan, add the minced garlic, thyme, and smoked paprika. Sauté for about 1 minute, until fragrant.

Cook the Orzo: Add the orzo to the pan and toast it for 2 minutes, stirring frequently. Then, pour in the chicken broth and heavy cream. Stir to combine, and bring the mixture to a gentle simmer.

Add Vegetables: Once simmering, add the cherry tomatoes and spinach to the pan, and stir. Return the seared chicken to the pan, nestling it into the orzo.

Simmer and Thicken: Cover the pan and simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid. Stir occasionally.

Finish with Cheese: Remove the lid, and sprinkle the grated Parmesan cheese over the top. Stir gently to combine and let it melt into the dish.

Serve: Garnish with fresh basil leaves before serving. Enjoy your delicious Marry Me Chicken Orzo!
