2 cups mini marshmallows

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (more if needed)

Pinch of salt

Food coloring (optional)

In a medium mixing bowl, combine the softened butter and mini marshmallows. Use a handheld mixer or stand mixer to beat them together on medium speed until the mixture is fluffy and well blended, about 2-3 minutes.

    Gradually add the powdered sugar, mixing on low speed to prevent a sugar cloud. Continue mixing until fully incorporated.

      Add the vanilla extract, milk, and a pinch of salt to the mixture. Beat on high speed for another 2-3 minutes until the icing is light, airy, and smooth. If the icing is too thick, add additional milk, one teaspoon at a time, until the desired consistency is reached.

        (Optional) If you want to add color, divide the icing into separate bowls and mix in a few drops of your chosen food coloring until you achieve your desired shades.

          Use immediately to frost cakes, cupcakes, or cookies, or store it in an airtight container in the refrigerator for up to a week. Before using chilled icing, give it a quick stir or re-whip for a fluffy texture.
