Strawberries are one of the quintessential fruits of summer, bursting with flavor and color. They typically peak in season from late spring through early summer, making them a perfect choice for this crisp. When selecting strawberries for your dessert, look for berries that are bright red, plump, and free from blemishes. Fresh strawberries should have their green caps still intact, as this indicates freshness.

Ingredients

4 cups fresh strawberries, hulled and sliced

4 cups fresh peaches, peeled and sliced

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup old-fashioned oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chilled butter, cut into small cubes

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Fruit Filling: In a large bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, and vanilla extract. Stir gently to coat the fruit evenly. Let it sit for about 10 minutes to allow the juices to develop.

Make Topping: In another mixing bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Mix well. Add the chilled butter cubes to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. If using, fold in the chopped nuts for added crunch.

Assemble Crisp: Pour the fruit mixture into a greased 9x13 inch baking dish. Evenly spread the topping over the fruit mixture, making sure to cover it generously.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Cool and Serve: Allow the crisp to cool for about 10-15 minutes before serving. This will help the juices thicken slightly. Serve warm with a scoop of vanilla ice cream or whipped cream if desired.

              Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 8

Enjoy this delightful strawberry peach crisp as a perfect summer dessert! 🍰
