16 Oreo cookies (crushed, plus 6 for topping)

8 oz cream cheese (softened)

1/4 cup granulated sugar

1 tsp vanilla extract

1 cup whipped topping (thawed)

1/4 cup mini chocolate chips (optional)

1/4 cup melted chocolate (for drizzling, optional)

Instructions
 

Begin by lining a mini muffin tin with paper liners. This will help you easily remove the cheesecake bites later.

    In a medium mixing bowl, combine the crushed Oreo cookies (reserve a couple for topping) and melted butter. Mix until the crumbs are thoroughly coated.

      Spoon the cookie mixture into each muffin liner, pressing down firmly to form a crust. Use a measuring cup or your fingers to flatten the crust evenly.

        In a separate large bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

          Gently fold in the whipped topping until fully incorporated. If desired, add mini chocolate chips for extra flavor and texture.

            Spoon the cream cheese mixture on top of the Oreo crust in the muffin tin, filling each liner to the top.
